Gingerbread cookies
A delicious Scandinavian treat: the pepperkaker cookie. The cookie is very thin and spicy. It is somewhat reminiscent of speculaas, but it contains slightly different spices. By using different cookie cutters, you can make them for all occasions.
Ingredients:
For about 20 pieces
- 450 g flour
- 200 g sugar
- 150 g butter
- 100 ml cream
- 100 ml agave syrup or honey
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp black pepper
- 1/2 tsp dried ginger
- 1/2 tsp cloves
Preparation:

Combine the flour, baking powder, and spices in a bowl. Mix everything together. Set the bowl aside.
In another bowl, mix the butter, sugar, and syrup. Mix until all the sugar has dissolved.
Add the cream to the mixture and mix until well combined.
Now add the flour mixture and mix everything together.
Place this dough in the refrigerator for at least 4 hours.
Preheat the oven to 180°C.
Cut the dough into 4 large pieces.
Sprinkle flour over the work surface.
Take the first piece of dough and roll it out well with a rolling pin.
Cut the cookies out of the dough with the cookie cutter and place them on parchment paper on a baking sheet.
Bake the cookies for 10-12 minutes.
When the edges are lightly browned, they are done.
Let the cookies cool on a wire rack.
Repeat until all the dough has been used and enjoy this delicious treat!
