St. Nicholas buns
It’s that time of year again for delicious "klaaskoeken"! With 1 bag of flour, you can bake quite a few "klaaspaarden," which will make everyone happy! Share these klaaskoeken and bring joy to everyone!
Ingredients:
For 7 to 20 pieces (depending on the size of the mold):
- 500 g flour
- 40 g fresh yeast
- 100 g butter
- 100 g sugar
- 2 eggs
- 200 ml milk
Instructions:

Dissolve the yeast in 200 ml of lukewarm water (+/- 30°C). (see tip)
Put the flour in a bowl and make a well in the center.
Add the milk, eggs, and yeast, and mix everything well.
Add the salt to the edge of the bowl, so not directly onto the yeast. (see tip).
Melt the butter slightly and add the sugar to it.
Add the butter and sugar to the dough.
Knead by hand for about 10 minutes until you have a smooth dough.
Shape the dough into a ball and place it back in the bowl, covering it with a clean towel.
Place the dough in a warm, draft-free spot in the house for 1 hour. This allows it to rise best.
Remove the towel. The dough should now have doubled in volume. If not, let it rise a little longer.
Knead the dough well again for 5 minutes and shape it back into a ball.
Place it back in the bowl with the towel over it and let it rise for another 15 minutes.
Preheat the oven to 220°C.
Get your molds ready. These can be baking pans or cookie cutters.
Take the dough out of the bowl and place it on your workspace.
Knead the dough thoroughly once more.
If you want to use a baking pan, you can place it in now and let it rest for a bit.
If you want to use cookie cutters, roll out the dough on your workspace (+/- 4 cm thick). Cut out the shapes with the cutter and place them on a baking sheet lined with parchment paper.

Bake for about 15 minutes.

Yeast
Yeast is a living product. Handling it correctly is important for the dough to rise.
Here are a few things to keep in mind:
- Temperature: Yeast works optimally between 25° and 30°C. Above 35°C, the yeast can no longer do its job, and the dough will not rise.
- Salt: Yeast and salt are not friends. Never sprinkle salt directly onto the yeast, as it will neutralize its effect.
