Christmas tree ice cream cake (no ice cream maker)

with Smarties

 

Impress your guests at your Christmas party with this ice cream cake. 

Requirements:

Christmas tree ice cream cake

For 1 Christmas tree mold

  • 3 eggs
  • 100 g granulated sugar
  • 250 ml heavy cream (35% fat)
Optional:
  • Vanilla extract
  • Smarties
  • Speculoos pieces
  • Chocolate chips

Method:

This ice cream cake must be made at least 24 hours in advance.

Make sure there is a spot in your freezer where the mold can lie completely flat to ensure proper freezing.

Only take the cream out of the fridge right before you need it. You can even put the mixing bowl for the cream in the fridge beforehand. The colder it is, the easier it is to whip.

Separate the egg yolks from the whites.

Mix the egg yolks with 50 g of sugar until the mixture becomes pale yellow and no more sugar crystals are visible.

Rinse your mixer well before moving on to the next step.

Whisk the egg whites halfway, then add 25 g of sugar. Continue whisking until the egg whites are stiff. You should be able to turn the bowl upside down without the egg whites falling out.

Rinse the beaters again before moving on to the next step.

Take the cream out of the fridge and add the remaining 25 g of sugar. Whisk the cream until it becomes whipped cream. You can stop mixing when you lift the mixer and small peaks remain.

Now comes the part where you need to be the most careful, i.e., combining the different parts. It is best to use a spatula for this.

Add the egg yolk mixture to the whipped cream and fold it in gently. If you want inclusions in your ice cream, add them at this stage. These could be chocolate chips, speculoos pieces, cuberdons, etc.

Now add the egg whites to the mixture and fold it in very gently again. You don't want to knock the air out of the mixture, otherwise the ice cream cake will become very hard.

Transfer the mixture into the silicone mold and smooth the top with the spatula.

Place the mold flat in the freezer.

After 24 hours, you can take it out. Carefully loosen the ice cream cake from the mold. Especially don't forget the corners.

Turn the ice cream cake over onto a plate and remove the mold.

Now you can decorate the ice cream cake as you wish.

Put it back in the freezer until you are ready to serve it.
