You can make these delicious oatmeal cookies in any shape you like. Because they contain oatmeal, they are rich in fiber, which helps you feel full for longer.
Ingredients:
For the cookies:
- 200 g oats
- 100 g whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- 100 g butter, at room temperature
- 100 g brown sugar
- 1 egg
For the glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Preparation:
For the cookies:
-
Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
-
In a bowl, mix the oats, whole wheat flour, baking powder, cinnamon, and a pinch of salt. Set the dry ingredients aside.
-
In another bowl, beat the butter and brown sugar together until light and fluffy. Add the egg and vanilla extract and mix well.
-
Gradually add the dry ingredients to the butter mixture and stir well until everything is combined.
- Let the dough rest in the refrigerator for at least 30 minutes.
-
Place the dough on a work surface and roll it out. Cut out the cookies with the cookie cutter and place them on the baking sheet.
-
Bake the oatmeal cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
-
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
For glazing the cookies:
-
In a bowl, add the powdered sugar, milk, and vanilla extract.
-
Whisk well with a whisk or spoon until all ingredients are fully combined into a smooth glaze. If the glaze is too thick, add a little extra milk, and if it is too thin, add more powdered sugar.
-
Ensure the oatmeal cookies have cooled completely before you start glazing.
-
Take a small amount of glaze on a spoon and drizzle it over each cookie. You can also use a spatula or a knife to spread the glaze evenly over the cookies.
-
Let the glaze on the oatmeal cookies set before serving. This usually takes about 30 minutes to an hour, depending on the room temperature.
-
Optional: You can add extra decorations, such as chopped nuts, coconut flakes, or colored sprinkles, while the glaze is still wet.
Enjoy these delicious oatmeal cookies with a cup of tea or coffee!
