Healthy fig crumble

For the topping
- 100 g oats
- 3 tbsp coconut fat, melted
- 1 egg
- 1 pinch of salt
- 1 tsp agave syrup (or honey)
- 70 g walnut flour (see tip)
- pinch of sea salt
For the filling
- 500 g fresh figs
- 1 lime
- 2 tbsp spelt flour
Method:
Preheat the oven to 180°C.
Melt the coconut fat. You can do this by placing it in the microwave for a few minutes at about 600W.
Mix the oats with the melted coconut fat.
Add the agave syrup, walnut flour, egg, and the pinch of salt.
Mix everything well with a spoon.
Next, we make the filling.
Wash the figs and pat them dry.
Remove the stems and cut the figs into quarters. Then, blend the figs into a puree. Juice the lime and add the juice. Finally, add the spelt flour.
Spread the filling into the baking tin. If you are using a metal tin, it is best to place baking paper on the bottom. With a silicone tin, you don't need to do this. Smooth the filling out nicely in the tin using the back of a spoon.
Now divide the topping over the filling. It is best to do this with your fingers so that you can easily distribute small pieces of topping.
Place the tin in the preheated oven. Bake for about 20 to 25 minutes. Once the topping is nicely browned and the filling is firm, it is ready.
Leave to cool.
