Homemade ice cream bars; the perfect dessert for a party.
Ingredients:
For 6 ice cream bars
- 3 eggs
- 100 g granulated sugar
- 250 ml cream; min. 35%
- 200 g dark chocolate
- 50 g white chocolate
Preparation method:

These ice cream bars must be made at least 24 hours in advance.
Make sure there is a spot in your freezer where the mold can lie completely flat so that the freezing process goes well.
Only take the cream out of the fridge right when you need it. You can even put the mixing bowl for the cream in the fridge as well. The colder it is, the easier it is to whip.
Separate the egg yolks from the egg whites.
Mix the egg yolks together with 50 g of sugar until the mixture turns light yellow and no sugar crystals are visible.
Rinse your mixer well before moving on to the next step.
Whip the egg whites halfway and then add 25 g of sugar. Continue whipping until the egg whites are stiff. You should be able to turn the bowl upside down without the egg whites falling out.
Rinse the beaters again before moving on to the next step.
Now take the cream out of the fridge and add the last 25 g of sugar. Whip the cream until you have whipped cream. You can stop mixing when you can pull the mixer out of the mixture and small peaks remain.
Now comes the part where you need to be most careful, namely, combining the different components. It is best to use a spatula for this.
Add the egg yolk mixture to the whipped cream and fold it in carefully.
Now add the egg whites to the mixture and again fold in very carefully. You do not want to knock the air out of the mixture, otherwise, the ice cream will turn out very hard.
Transfer the mixture into the ice cream mold and smooth the top with the spatula.
Place the mold flat in the freezer.
After at least 6 hours, you can take them out. First, melt the chocolate using a double boiler. Carefully remove the ice cream bars from the ice cream mold and dip/swirl them in the chocolate.
Decorate with white chocolate drizzles if desired.
Put them back in the freezer until you are ready to serve.
