Healthy banana muffins

These delicious banana muffins are perfect for breakfast or as a snack. You can make them in advance and take them with you as a healthy and nutritious snack. We don't add any fat, making them low in calories.

Requirements:

For approximately 10 muffins

  • 4 tablespoons of yogurt; I chose Skyr yogurt for the extra protein;
  • 3 eggs
  • 3 bananas
  • 2 tablespoons of erythritol
  • 1 level tablespoon of baking powder
  • 100 g rolled oats

Instructions:

Preheat the oven to 180°C.

Mash the bananas.

Add the eggs, erythritol, baking powder, and yogurt.

Mix everything well.

Add the rolled oats and mix until combined.

Divide the batter into the muffin tin.

Place in the oven for 30 minutes.
